Parmesan Crusted Chicken Sheet Pan Dinner
Ingredients
For the Chicken:
1 1/2 lb chicken breast (3-4 pieces, about 1 inch thick)
2 tablespoons olive oil
2 garlic cloves, minced
1/3 cup grated Parmesan
1/3 cup breadcrumbs (Italian or plain; add 1 tsp Italian seasoning if using plain)
1/2 teaspoon cracked black pepper
1/2 - 3/4 teaspoon sea salt
For the Potatoes:
2 lb red potatoes, cut into bite-sized pieces (quarter small potatoes, or cut larger ones into sixths or eighths)
1-2 garlic cloves, minced
2 tablespoons olive oil
2 tablespoons grated Parmesan
Salt and pepper to taste
For the Green Beans:
1 lb fresh green beans, ends trimmed
1 tablespoon olive oil
1 garlic clove, minced
1 tablespoon Parmesan (optional)
Salt and pepper to taste
Instructions
Preheat Oven: Set your oven to 425°F (220°C). Line a sheet pan with parchment paper or spray with cooking oil for easy cleanup.
Prepare the Potatoes: In a medium bowl, toss together the potatoes, minced garlic, olive oil, Parmesan, salt, and pepper until evenly coated. Spread the potatoes on one-third of the sheet pan and bake for 10-15 minutes. If you prefer crispier, browned potatoes, leave them in for an additional five minutes.
Prepare the Chicken: While the potatoes are roasting, use the same bowl to combine the chicken, olive oil, garlic, Parmesan, breadcrumbs, salt, and pepper. Coat the chicken pieces evenly.
Add Chicken to the Pan: Remove the pan from the oven and add the seasoned chicken next to the potatoes. Return the pan to the oven.
Prepare the Green Beans: In the same bowl, toss the green beans with olive oil, garlic, Parmesan (if using), salt, and pepper. After the chicken has cooked for about 10 minutes, add the green beans to the sheet pan alongside the chicken and potatoes.
Finish Cooking: Bake everything for another 25 minutes or until the chicken reaches an internal temperature of 165°F (74°C). If you want extra crispy potatoes, turn on the broiler for an additional 4-5 minutes at the end.
Serve: Let everything cool for a few minutes, then serve and enjoy!
I absolutely love sheet pan dinners, and this Parmesan Crusted Chicken Sheet Pan is seriously one of my all-time favorites! As a busy individual, finding recipes that are both incredibly delicious, packed with nutrition, and easy to clean up is an absolute game-changer. This meal truly checks all the boxes, making it a perfect solution for those hectic weeknights when you still crave a wholesome, home-cooked meal without a ton of fuss in the kitchen. The magic of a sheet pan dinner lies in its simplicity – everything cooks together, infusing flavors and minimizing cleanup to just one pan. It's a lifesaver! What I really appreciate about this recipe is how it effortlessly brings together a complete and balanced meal on a single pan. The chicken breasts emerge from the oven beautifully golden brown, boasting that amazing, savory Parmesan crust that everyone loves. Alongside, the roasted red potatoes achieve that perfect texture – tender on the inside and slightly crispy on the outside, soaking up all those delicious roasting flavors. And let's not forget the green beans; they add a lovely fresh crunch and a vibrant pop of color to the plate, ensuring you get your serving of greens without extra effort. It's truly a satisfying dish that my whole family enjoys, even the pickiest eaters, making it a staple in our chicken dinner recipes for family rotation! For those of you actively seeking healthy dinner recipes, this sheet pan meal stands out as a fantastic option. Chicken breast is an excellent source of lean protein, which is essential for muscle health and satiety. You're also packing in plenty of fiber-rich vegetables and complex carbohydrates from the potatoes, providing sustained energy. The use of olive oil adds healthy fats, making it a well-rounded meal. To make it even healthier or more aligned with specific dietary goals, such as those following a Weight Watchers plan, there are a few simple tweaks you can easily incorporate. For instance, using cooking spray on the sheet pan and for tossing veggies, instead of all olive oil, can help reduce overall calorie and fat content. You can also opt for a lighter hand with the grated Parmesan cheese or explore substitutions for the breadcrumbs. I've personally tried using finely crushed pork rinds or a mix of almond flour with spices for an extra crispy, low-carb crust on the chicken, and it works wonderfully! I often find myself adding extra non-starchy vegetables like broccoli florets, sliced bell peppers, or even asparagus to the pan during the last 15-20 minutes of cooking. This boosts the fiber, vitamins, and volume of the meal without significantly increasing calories. This dish isn't just healthy and easy; it's incredibly versatile for various dinner ideas. Sometimes I'll swap out the red potatoes for sweet potatoes for a different flavor profile, or experiment with different herbs for the green beans – a sprinkle of dried dill or a pinch of red pepper flakes can add a lovely kick. A squeeze of fresh lemon juice over everything right before serving really brightens up all the flavors and is a must-try for that extra zing! For busy individuals or parents, this recipe is also fantastic for meal prepping. I often cook a larger batch than needed for dinner and portion it out into containers for healthy, ready-to-go lunches throughout the week. The leftovers reheat surprisingly well, making healthy eating effortless and convenient. It’s truly a winner in our house, offering a wholesome, flavorful, and incredibly easy garlic Parmesan chicken dinner that everyone will love. Give this sheet pan meal a try – you won't regret how simple, satisfying, and delicious it is!

Turned out amazing!! Thank you!! ❤️🥰
