🍲 Warm up with this Creamy Parmesan Italian Sausag

🍲 Warm up with this Creamy Parmesan Italian Sausage Ditalini Soup! 🧀💛

It’s rich, cozy, and packed with delicious flavors perfect for a chilly night.

Ingredients:

1 lb Italian sausage, casings removed

1 tbsp olive oil

1 small onion, diced

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, drained

4 cups chicken broth

1 cup heavy cream

1 cup small pasta (ditalini or elbow)

1 cup shredded Parmesan cheese

1/2 tsp dried basil

1/2 tsp dried oregano

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Directions:

Cook the Sausage: Heat olive oil in a large pot over medium heat. Add the Italian sausage, breaking it up as it cooks until browned. Remove the sausage from the pot and set it aside.

Sauté the Aromatics: In the same pot, add the diced onion and minced garlic. Cook until the onion is translucent, about 3–4 minutes.

Add Tomatoes and Broth: Stir in the drained diced tomatoes, chicken broth, dried basil, and dried oregano. Bring the mixture to a boil.

Cook the Pasta: Add the pasta to the boiling broth mixture and cook until it is al dente, approximately 8–10 minutes.

Make it Creamy: Reduce the heat to medium-low. Stir in the heavy cream and shredded Parmesan cheese, allowing the cheese to melt and thicken the soup.

Add Sausage Back In: Return the cooked sausage to the pot, stirring to combine with the soup. Season with salt and pepper to taste.

Serve: Ladle the soup into bowls, garnish with freshly chopped parsley, and enjoy this hearty Italian-inspired meal!

... Read moreI absolutely adore a good, hearty soup, and this Creamy Parmesan Italian Sausage Ditalini Soup has quickly become a top contender in my kitchen! It’s not just a recipe; it’s an experience, especially when you savor each spoonful of that perfect blend of savory sausage, tender ditalini, and creamy Parmesan. I wanted to share a few extra tips and tricks I've learned to make your bowl even more delightful, drawing on some of the things I love most about this soup, like how the ingredients really shine in a close-up. First, let's talk about the star of the show: the ditalini pasta. This small, tube-shaped pasta is absolutely ideal for soups because it holds its shape beautifully and provides a wonderful texture without overwhelming the liquid. When you see a ditalini pasta soup bowl, you'll notice how these little rings nestle perfectly amongst the other ingredients, soaking up all that incredible broth. My secret to perfectly cooked ditalini every time is to add it after the broth comes to a boil and keep a close eye on it. You want it al dente – still a little firm to the bite – so it doesn't get mushy as it sits in the hot soup. This ensures that every bite, even a close-up of the ditalini pasta cooked in the soup, looks and tastes fantastic. Next, the incredible flavor brought by the Italian sausage and that generous topping of grated Parmesan. When preparing the sausage, don't rush the browning process. Allowing it to get nicely caramelized in the pot before adding the aromatics builds a crucial layer of flavor that permeates the entire soup. As for the Parmesan cheese grated over soup, it's not just a garnish; it's a game-changer! I always use freshly grated Parmesan, not the pre-shredded kind, because it melts more smoothly and releases a more intense, nutty, and salty flavor that truly transforms the creamy broth. Seeing that beautiful layer of grated parmesan over soup is just so inviting. Speaking of presentation, sometimes it's the little details that make a meal truly special. Just like in a good pasta with sausage and parmesan close up, consider how you plate your soup. A sprinkle of fresh parsley adds a vibrant color and a fresh herbaceous note that contrasts beautifully with the rich soup. A crack of fresh black pepper also enhances the overall aroma and adds a subtle kick. If you're feeling adventurous, a tiny pinch of red pepper flakes can introduce a lovely warmth, or a handful of fresh spinach or kale added at the very end can boost the nutrition and add another layer of texture, wilting perfectly in the hot broth. These small additions can make your creamy sausage ditalini soup even more visually appealing and delicious. This soup is truly a comforting hug in a bowl, perfect for sharing with loved ones or enjoying on a quiet night in. The combination of easy steps and incredible flavor makes it a recipe I reach for again and again.
