These 'brochetas de camarón y res' (as we say in Spanish!) are absolutely perfect for a weeknight dinner or a casual weekend barbecue. The best part? We're grilling them, so you get all that amazing smoky flavor without needing extra oil! Let's talk ingredients first. For the beef, I usually go for sirloin or tenderloin, cut into 1-inch cubes. For the shrimp, large or jumbo shrimp work best, peeled and deveined. And of course, we need some colorful veggies! Bell peppers (red, yellow, green), red onion, zucchini, and cherry tomatoes are my favorites. They add so much freshness and crunch. Now, for the magic—the marinade! This is what really infuses your skewers with incredible taste. I like a simple, tangy marinade: 1/4 cup olive oil (just a little for flavor, remember we're grilling without added fat!) 2 tablespoons lemon juice or lime juice 3 cloves garlic, minced 1 teaspoon dried oregano 1/2 teaspoon smoked paprika Salt and freshly ground black pepper to taste In a bowl, combine the beef cubes with half of the marinade and let it sit for at least 30 minutes, or even better, a few hours in the fridge. Do the same with the shrimp and veggies in a separate bowl, but only marinate the shrimp for about 15-20 minutes – they cook much faster and can get mushy if marinated too long. Once everything is marinated, it's time to assemble! If you're using wooden skewers, remember to soak them in water for at least 30 minutes beforehand to prevent them from burning on the grill. Thread your beef, shrimp, and veggies alternately onto the skewers. Try not to pack them too tightly, as this helps everything cook evenly. Preheat your grill to medium-high heat. Once hot, place your skewers on the grill. Cook the shrimp skewers for about 2-3 minutes per side, until the shrimp turn pink and opaque. For the beef skewers, cook for about 3-4 minutes per side for medium-rare, or longer if you prefer them more well-done. The veggies should be tender-crisp with nice char marks. My top tip for perfect skewers? Don't overcook the shrimp! They can go from tender to rubbery in seconds. Also, give them a good turn every few minutes to ensure even cooking and those beautiful grill marks.
