There isn't a single direct English translation, as 'quelite' is a broad term, but they're often called 'Mexican wild greens' or 'edible herbs.' These aren't just any greens; many quelite varieties come from plants like amaranth, epazote, or even certain types of young squash leaves, and they've been a staple in Mexican cooking for centuries, long before refrigeration! Each type has its own distinct flavor profile, from slightly bitter to subtly sweet. When I first encountered them, I was amazed by the diversity and how much they add to a dish. It’s truly a taste of Mexico's rich culinary heritage. Now, about the plant itself. Quelites grow wild, often found in fields or gardens, and are incredibly resilient. My absolute favorite way to prepare them is simply sautéed with garlic and a bit of onion, maybe a serrano pepper for a little kick, and a squeeze of lime juice at the end.
