Deciding to reintroduce meat into my diet after five years was a surprisingly emotional and sensory challenge. I had been so accustomed to a vegetarian lifestyle that the flavors and textures of meat felt foreign — even uncomfortable at first. Starting with chicken might have been gentler, but I opted to jump straight in, aiming to prepare myself for the rich culinary traditions awaiting me in Japan and Korea. During my trial, I found myself scrutinizing every bite, trying to interpret the unfamiliar sensations. My past favorite, In-N-Out’s burger, suddenly tasted different; the patty didn’t quite meet my expectations, and I struggled to enjoy it as I once did. It was a vivid reminder of how much our food preferences evolve over time. I even attempted to chase the taste with fries to lessen any unpleasantness. This experience highlighted how food is not just about nourishment but also emotional connections and memories. As I prepare for my travels, I’m optimistic that gradually reintroducing meat will not only help me fully experience the local dishes but also make the journey more enjoyable. Everyone’s relationship with food is unique, and mine is currently in a phase of rediscovery and openness.
