Slow Cooker Texas Cowboy Stew

Ingredients:

- 2lbs Venison

- 1lb kielbasa

- 1 yellow onion

- 1 container of mushrooms

- Minced Garlic

- 1 small bag of golden potatoes

- 30oz Pinto Beans

- 15oz black beans

- 15oz Corn

-15oz diced tomatoes

- 14oz fire roasted Rotel

-10oz frozen mixed vegetables

- beef broth

- brown sugar

- smoked paprika

-onion powder

-garlic powder

- salt and pepper

- Fresh Parsley

Directions

1. Chop onion and place on skillet with minced garlic and venison. Brown venison

2. While venison is browning, slice kielbasa and place in slow cooker.

3. Add to slow cooker, rinsed pinto beans, rinsed black beans, corn, diced tomatoes, fire roasted rotel, mushrooms, vegetables, and diced potatoes.

4. Then, drain skillet and add venison and onions to slow cooker

5. Then season with your heart using smoked paprika, garlic powder, onion powder, minced garlic, salt and pepper. Add brown sugar, roughly 2 TBSP.

6. Add enough beef broth till everything is covered. Roughly 2 cups.

7. Cook for 8hours on high or until cooked through.

8. Top with fresh parsley when ready to serve

Tips:

- It will be a tight squeeze in a slow cooker, if you have a roaster you can also use that.

- I like to top mine with Colby Jack cheese with sour cream.
