Loaded Nachos… Without the Regret
🧀 We’ve all encountered this predicament: late-night TV baseball game, and your family’s craving for nachos.
This happened to me.
Decided to try and make a healthy version. No recipe, but just thinking through ingredients I could use.
Ground Turkey
Corn chips (Safeway fresh made)
Pico de gallo
Guacamole
Low fat Mexican cheese blend
Cook and season the ground turkey. Spread the chips on a foil-lined pan, then pour the ground turkey over them. Generously top with cheese. We used a toaster oven on the toast setting, which took 4 minutes to melt the cheese.
Top with the pico and guacamole. Serve immediately.
