Stir Fry 🥰

Ingredients:

Stir Fry & Soba Noodles

Choice of Meat: Flank Steak

Marinade: Worcester Sauce, soy sauce, white granulated sugar, salt, cornstarch, tab bit of apple cider vinegar

Cut into small strips

In a large deep pan cook the meat and drain some of the juice, add in sliced carrots, pieces of broccoli, make a space in the pan and make some scrambled eggs ( you could also cook everything separately and then put it all together. My tip is add a lot of oil in the pan before you put anything and a good amount of salt so that nothing sticks !

So meat, carrots, egg, broccoli, stir fry and soba noodles. And then toss or stir with some chopsticks 🫶.

Hope you enjoy ❣️

... Read moreHey foodies! I wanted to dive a little deeper into why this Soba Noodle Stir Fry has become such a staple in my kitchen, especially when I'm craving something quick, healthy, and incredibly satisfying. You know how sometimes you just want that perfect bite, where all the flavors and textures come together? That's exactly what this dish delivers, and honestly, the close-up shot truly captures its deliciousness! Let's talk about the stars of the show. First, those amazing dark soba noodles. They're not just a delicious alternative to traditional wheat noodles; they bring so much more to the table. Made from buckwheat, soba noodles have a slightly nutty flavor and a fantastic chewy texture that holds up beautifully in a stir-fry. Plus, they're often a great source of fiber and protein, making this meal feel even more wholesome. When I cook them, I always make sure not to overcook them – a quick boil and then a cold rinse helps them stay perfectly al dente and prevents them from clumping. Then there's the flank steak. Oh, how I love flank steak in a stir-fry! It's lean, flavorful, and when sliced against the grain and marinated properly, it becomes incredibly tender. My secret? Don't skip the cornstarch in the marinade. It creates a protective coating that locks in moisture and gives the meat a lovely velvety texture when cooked. And remember to cook it quickly over high heat to get that beautiful sear without overdoing it. Nothing worse than tough stir-fry beef! And who could forget the scrambled eggs? They might seem like an unconventional addition to some, but trust me, they add such a wonderful richness and an extra layer of protein. I like to cook them separately in a little space I clear in the pan, or even in a separate pan, breaking them into bite-sized pieces. They soak up all the delicious sauce and become little flavor sponges. For the veggies, I usually stick to carrots and broccoli because they're always in my fridge and add great color and crunch. But feel free to get creative! Bell peppers, snap peas, mushrooms, or even some baby corn would be fantastic additions. The key is to add them in stages, starting with the harder vegetables like carrots, and then the softer ones like broccoli, so everything cooks evenly and retains a bit of its bite. Finally, the presentation! There's something so authentic and enjoyable about twirling those noodles with chopsticks. It’s not just a utensil; it’s part of the experience. And when you get that perfect spoonful (or chopstick-ful!) with a piece of flank steak, some scrambled egg, and a vibrant veggie, it’s pure bliss. This dish also packs wonderfully for lunch the next day, making it a perfect meal prep option. Just imagine opening up that styrofoam container at work and seeing all those beautiful colors and textures – it's definitely a lunch to look forward to! So, next time you’re looking for a fuss-free, flavor-packed meal, give this stir-fry a try. You won't regret it!
