My Mexican Rice

This is how I make my rice. I actually really don’t measure my spices. I just measure with my heart, but I do one cup rice to about 4 tablespoons of tomato sauce , 2 cups water and cook for 20 minutes on low and then put to the side. Corn is optional. #mexicanrice #hispanicfood #latina #mexicanrecipe

... Read moreWhen I first started making Mexican rice, I was so intimidated! It seemed like such a complicated dish to get just right – either too mushy, too dry, or lacking that authentic flavor. But I promise you, once you get the hang of a few simple steps, you'll be making fluffy, flavorful rice every time! My secret, like many home cooks, is to 'measure with my heart' on the spices, but I can give you a fantastic starting point that you can totally personalize. Here’s what I usually gather for my delicious Mexican rice: 1 cup long-grain white rice (like Jasmine or Basmati) 1-2 tablespoons vegetable or canola oil ¼ cup finely diced white onion 1-2 cloves garlic, minced 4 tablespoons tomato sauce 2 cups chicken broth (or water, but broth adds so much more flavor!) ½ teaspoon ground cumin ½ teaspoon garlic powder ¼ teaspoon onion powder Salt and black pepper to taste Optional: ½ cup frozen corn or peas, fresh cilantro for garnish Now, let's get cooking! This is my tried-and-true method for perfect Mexican rice: Prep Your Pan: First things first, I always heat a little oil in a medium saucepan on my cooktop over medium heat. You want enough oil to lightly coat the bottom of the pan. Toast the Rice: Once the oil is shimmering, add your rice to the pan. This is a crucial step for flavor and texture! You want to toast the rice until it's a beautiful golden brown. Stir it constantly for about 5-7 minutes to ensure even browning and prevent burning. This gives it a lovely nutty flavor and helps prevent it from getting mushy. Sauté Aromatics: Next, I toss in my finely diced onion and minced garlic. Let them soften and become fragrant, about 2-3 minutes. Oh, the smell that fills your kitchen at this point is just heavenly! Build the Flavor Base: Now for the star of the show! Stir in the tomato sauce, ground cumin, garlic powder, onion powder, salt, and a pinch of black pepper. Let it cook for another minute, stirring constantly, to really deepen those flavors and cook out any raw tomato taste. Add Liquid & Boil: Carefully pour in the chicken broth (or water) and give everything a good stir, making sure no rice or spices are sticking to the bottom of the pan. Bring the liquid to a rolling boil. Simmer & Steam: Once it’s vigorously boiling, reduce the heat to low, cover the pot tightly with a lid, and let it simmer for exactly 20 minutes. Resist the urge to peek! That steam is doing all the magic needed to cook your rice perfectly. Rest Time: After 20 minutes, remove the pot from the heat but keep the lid on. Let it rest undisturbed for another 5-10 minutes. This allows the steam to redistribute and the rice to fully plump up, resulting in a lighter, fluffier texture. Fluff & Serve: Finally, gently fluff the rice with a fork. If you're adding frozen corn or peas, now's the time to stir them in – the residual heat will warm them through beautifully. Taste and adjust seasoning if needed. Garnish with fresh cilantro if you like! My Top Tips for Success: Don't Lift the Lid! Seriously, this is my biggest tip. Every time you peek, you let precious steam escape, which can lead to unevenly cooked or dry rice. Broth vs. Water: Using chicken broth instead of just water adds so much more depth of savory flavor to your rice. Tight Lid: Always use a tight-fitting lid to trap that precious steam for perfect cooking. This rice is such a versatile side! I love serving it with tacos, enchiladas, fajitas, or even just alongside some grilled chicken or fish. It instantly makes any meal feel like a fiesta! If you ever end up with mushy rice, you might have added too much liquid or lifted the lid too often. If it's dry, perhaps not enough liquid or too high heat. Practice makes perfect, and soon you'll be a Mexican rice pro!
