🍋Raspberry Lemon Bar Iced Latte🍋

🍋Raspberry Lemon Bar Iced Latte with a Lemon Custard Cold Foam🍋

This is for a 24oz cup. Adjust to your liking.

Latte Base:

Double shot espresso

8oz milk of choice (oat works best)

8-10 fresh raspberries, plus 1 tbsp sugar (I use Truvia)

4 pumps vanilla syrup

1/4 tsp lemon extract

🩷 You can use 4 pumps of raspberry syrup if you don’t want to use fresh raspberries, is so, be sure to omit the sugar too.

Lemon Custard Cold Foam

2oz heavy cream

1 tbsp lemon curd

Garnish/Toppings

Crushed shortbread cookies or vanilla wafers

Powdered sugar

🍋 At the bottom of your cup, muddle your raspberries with 1 tbsp sugar.

🍋 Add the vanilla syrup and lemon extract, stir to combine

🍋 Fill your cup with ice

🍋 Brew your espresso.

🍋 In a separate cup, mix together your milk and espresso then pour over your ice.

🍋 Froth together your cold foam ingredients to your desired consistency, then pour on top of your latte

🍋 Top with your choice of crushed cookies, then dust with powdered sugar.

Enjoy 😋

... Read moreIf you're looking to elevate your iced latte experience, the Raspberry Lemon Bar Iced Latte is an amazing choice that balances tart and sweet flavors with a creamy finish. From my experience, using fresh raspberries muddled with a bit of sugar at the bottom of the cup really intensifies the fruity notes compared to using raspberry syrup, but if convenience is a priority, syrup without added sugar works well too. When it comes to milk, oat milk not only adds a naturally sweet and smooth texture but also froths well, making your cold foam rich and luscious. The lemon custard cold foam is key—it’s simple to make at home by whipping heavy cream with lemon curd, bringing a bright citrus twist that complements the espresso and raspberries perfectly. For a little extra indulgence, topping your latte with crushed shortbread cookies or vanilla wafers dusted with powdered sugar adds delightful texture and sweetness, reminiscent of a raspberry lemon bar dessert. This drink is refreshing and has a lovely balance of sunshine sweetness and slight tartness—ideal for a summer pick-me-up or a creative café-style treat you can make at home. If you want to customize your iced latte further, try experimenting with the vanilla syrup amount or swap lemon extract for fresh lemon juice for a more natural zing. Also, adjusting the sweetness to your liking by varying sugar or sweetener amounts can make this delicious drink your own signature creation. This recipe is not only fun to make but also a great way to impress friends with a café-quality beverage crafted from simple, fresh ingredients.
