Ingredients:
4 bone-in beef short ribs
Salt and pepper, to taste
2 tbsp olive oil
1 medium onion, chopped
4 cloves garlic, smashed
2 sprigs fresh rosemary
1 cup red wine
2 cups beef broth
2 tbsp tomato paste
2 tbsp butter (optional)
Instructions:
Preheat your oven to 325°F (165°C).
Season the short ribs generously with salt and pepper.
Heat olive oil in a large skillet or Dutch oven over medium-high heat. Once hot, sear the short ribs on all sides until browned, about 3-4 minutes per side. Remove and set aside.
In the same skillet, add chopped onion and garlic, cooking until softened and fragrant, about 5 minutes.
Stir in tomato paste, then pour in red wine to deglaze the pan, scraping up any browned bits from the bottom.
Add the beef broth and rosemary sprigs, stirring to combine. Return the short ribs to the skillet, bone-side down.
