Old Fashioned Beef Stroganoff Recipe

Ingredients:

(1 lb) beef sirloin or rump steak (thinly sliced into strips)

2 tbsp butter

1 small onion (finely chopped)

2 cloves garlic (minced)

(7 oz) mushrooms (sliced)

1 tbsp flour

1 1/2 cups beef broth

1 tbsp Worcestershire sauce

1 tsp Dijon mustard (optional, for a little tang)

3/4 cup sour cream

Salt & pepper to taste

Fresh parsley for garnish

Egg noodles or rice for serving

Instructions:

Season beef strips with salt & pepper.

In a large skillet, melt 1 tbsp butter. Quickly sear beef (just until browned). Remove & set aside.

In same pan, add another tbsp butter. Cook onions & garlic until soft.

Add mushrooms, cook until golden.

Sprinkle in flour → stir 1 min.

Slowly pour in beef broth while stirring. Add Worcestershire & mustard. Simmer 3-4 min until slightly thickened.

Lower heat → stir in sour cream. Don’t boil!

Add beef back in → heat gently just until warm.

Taste & adjust seasoning.

Serve over hot egg noodles or rice. Sprinkle with parsley.

→ Use good quality beef — the more tender, the better.

→ Don’t overcook the beef! Keep it juicy.

→ Old-school style: skip mustard & use just sour cream.
