CRUSTY MINI BAGUETTES

INGREDIENTS:

2 1/4 cups all-purpose flour (or bread flour)

3/4 cup warm water (around 110°F)

1 tsp salt

1 packet active dry yeast (2 1/4 tsp)

INSTRUCTIONS

1. In a bowl, dissolve the yeast in the warm water. Let it sit for 5–10 minutes until foamy.

2. In a large mixing bowl, combine the flour and salt. Pour in the yeast mixture and stir until a shaggy dough forms.

3. Turn the dough out onto a floured surface and knead for 8–10 minutes until smooth and elastic.

4. Place the dough in a lightly greased bowl, cover, and let it rise for 1 hour or until doubled in size.

5. Preheat oven to 475°F. Place an empty pan on the bottom rack (for steam).

6. Punch down the dough and divide into 3–4 pieces. Shape into mini baguettes and place on a parchment-lined baking sheet. Let rest for 20 minutes.

7. Using a sharp knife, make a few diagonal slashes on top. Pour a cup of hot water into the empty pan for steam (optional but helps crust).

8. Bake for 20–25 minutes, or until golden brown and crusty. Cool on a wire rack before serving.

This recipe focuses on just a few essential ingredients: all-purpose or bread flour, warm water, salt, and active dry yeast. The key to achieving the iconic crusty texture lies in the baking technique and correct handling of the dough. One important step is proofing the yeast in warm water until it becomes foamy, ensuring the yeast is active for a good rise. Kneading the dough well for 8 to 10 minutes develops gluten strands, giving the bread its structure and chewiness. Allowing the dough to rise doubled in size is crucial for a light and airy crumb. Using steam during baking enhances the crust formation. This is achieved by placing an empty pan in the oven and pouring hot water into it just before baking; the steam helps create a crispy exterior by delaying crust set-up, allowing the bread to expand fully. Making diagonal slashes on top helps the bread expand without cracking randomly. Mini baguettes are ideal for individual servings and can be enjoyed with various toppings or as sandwich bread. Baking time at a high temperature (475°F) ensures a golden color and crunch. Cooling on a wire rack prevents sogginess from trapped steam. For best results, use bread flour for higher protein content or mix all-purpose flour with vital wheat gluten to enhance elasticity. Experiment with additional ingredients like herbs or seeds for added flavor. This beginner-friendly recipe offers both simplicity and the authentic taste of French bread, making it perfect for home bakers seeking delicious, fresh mini baguettes anytime.
