1 salmon fillet (~180g)

1 cup baby potatoes, cubed

½ cup green beans or asparagus spears

½ avocado, sliced

¼ cucumber, chopped

¼ red onion, chopped

Handful of mixed greens or lettuce

Olive oil, garlic powder, dried herbs (oregano, thyme, parsley)

Salt & black pepper

Lemon wedge (optional)

1 tbsp ketchup (optional)

𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:

1️⃣ Roast the Potatoes & Veggies

Preheat oven to 425°F (220°C). Toss cubed potatoes with olive oil, herbs, garlic powder, salt & pepper. Spread on a baking tray. Add green beans or asparagus tossed with oil and roast everything for 20–25 minutes, flipping halfway.

2️⃣ Cook the Salmon

Season salmon with salt, pepper, and a pinch of garlic powder. Heat a pan over medium-high heat with oil. Sear salmon skin-side down for 4–5 minutes, flip, and cook another 2–3 minutes until golden and flaky.

3️⃣ Make the Salad

In a bowl, mix chopped cucumber, red onion, avocado slices, and greens. Dress lightly with olive oil, salt, pepper, and lemon juice if desired.
