Creamy Alfredo for Picky Eaters

If you love Alfredo but want something a little lighter, this cottage cheese Alfredo is SO good. You can’t even taste the cottage cheese, but it makes the sauce extra creamy and adds protein 🙌

✨ What you’ll need:

• Pasta of choice (I used fettuccine)

• 1 cup cottage cheese

• ½ cup grated parmesan

• 2 tbsp butter

• 2 cloves garlic

• Splash of milk (to thin if needed)

• Salt, pepper, Italian seasoning, paprika

• Shrimp (peeled & deveined)

• Optional: a little lemon juice + parsley

👩‍🍳 How to make it:

1. Cook pasta according to package instructions.

2. Sauté shrimp in butter with garlic until pink and cooked through. Set aside.

3. Blend cottage cheese + parmesan + a splash of milk until smooth.

4. Add sauce to a pan, warm it up gently (don’t boil), season with seasonings.

5. Toss in pasta + shrimp and mix until coated.

6. Finish with extra parm and a squeeze of lemon if you like!

💭 Why it works:

The cottage cheese blends into a silky sauce that’s not too heavy, making it perfect for picky eaters who might not love traditional Alfredo. Plus, the shrimp adds the perfect savory touch without overpowering it. Sneaking in protein wherever we can! Would you try cottage cheese in your pasta?!

... Read moreIf you're looking for a way to enjoy Alfredo sauce without all the heaviness of traditional cream, using cottage cheese is a fantastic trick that I’ve personally tried and loved. Cottage cheese not only makes the sauce exceptionally creamy but also adds a good protein punch, which is great especially if you're aiming to incorporate more nutritious elements into your meals without sacrificing flavor. In my experience experimenting with this recipe, blending cottage cheese with parmesan and a splash of milk creates a smooth sauce that clings nicely to pasta. Cooking the shrimp with garlic and butter infuses the dish with savory flavor while keeping it light. I’ve found that using fettuccine works perfectly because its broad shape holds the sauce well, but feel free to use any pasta type you have on hand. One important tip is to gently warm the sauce instead of boiling it, as high heat can cause the dairy to curdle. Seasoning with Italian herbs, salt, pepper, and a bit of paprika adds a mild but flavorful depth that even picky eaters seem to enjoy. A small squeeze of lemon juice at the end lifts the entire dish with a fresh zing and brightens flavors. For those who may be hesitant to try cottage cheese in a sauce, I promise it blends seamlessly and is virtually undetectable in taste. This makes it an ideal way to sneak extra protein into meals, especially for kids or anyone wary of new ingredients. Adding parsley not only adds a lovely color contrast but also a subtle freshness that complements the creamy sauce and shrimp beautifully. Overall, this Cottage Cheese Alfredo is a simple, quick, and healthy one-pan meal option that balances indulgence with nutrition, perfect for anyone who loves classic Alfredo but wants a lighter, protein-rich version.

does it work without shrimp? I'm allergic to shrimp, but it looks so good, though
