Sourdough Focaccia
•Ingredients•
1 cup warm water
1 tsp sugar
1 packet active dry yeast
2 1/4 cup flour
100g sourdough discard
1 tosp olive oil
1/4 cup mozzarella cheese
Topping:
3 tbsp butter, melted
1 tbsp minced garlic
1/2 tsp salt
2 tsp italian seasoning
2 tbsp grated Parmesan cheese
Sea Salt for taste
•Directions•
1. In a large bowl, combine the water and sugar. Stir to dissolve the sugar. Sprinkle yeast on top. Let foam for 5-10 minutes.
2. Add sourdough discard and mix. Add flour and salt. The dough will be thin and sticky. Place in an oiled bowl and let rise, covered, for 2-3 hours until doubled.
3. Brush an 8x8 or 9x9 plan with 1 tbsp olive oil. Transfer dough to the pan and rise, covered, for 2 hours until the dough fills the pan.
4. Preheat the oven to 450.
5. Top with mozzarella, and dimple the dough with your fingers.
6. In a saucepan, melt butter over medium heat. Add minced garlic and cook until fragrant. Add Italian Seasonings and Parmesan. Pour over dough and top with Sea Salt.
Bake 25-30 minutes
