For the filling, cook 1 lb of ground beef in a skillet over medium heat until browned. Add in 1 cup of cooked Spanish-style rice, 1 diced onion, and 1 can of diced tomatoes along with any optional diced pepper. Stir until combined and heated through. While the filling cools, cut the tops off 4 large bell peppers and remove the seeds. Stuff each pepper generously with the beef mixture and layer with shredded cheese for added flavor. Place the stuffed peppers upright in a baking dish, add a dash of seasoning, and cover with foil. Bake for about 25 minutes and remove the foil for the last 10 minutes to let the cheese melt and brown. This recipe is not only quick but also allows you to prepare healthy meals effortlessly.
