I’ve found that combining cubed potatoes and onions around the chicken creates a beautiful balance of flavors. The addition of pats of butter under the skin and on top of the chicken adds moisture and richness, while drizzling olive oil helps the seasoning stick and promotes crispy skin. Using Italian seasoning, along with salt and pepper, provides a classic and versatile flavor profile that pairs well with various veggies. Baking the chicken at 325°F for 1 1/2 hours allows the meat to cook thoroughly and the potatoes and onions to begin softening. Removing the chicken and letting it rest wrapped in foil is key to letting the juices redistribute, keeping the chicken juicy. After that, stirring the potatoes and onions in the pan juices and baking them at a higher temperature (425°F) for 20-25 minutes boosts their crispiness. This step is also a great opportunity to toss in another vegetable, such as broccoli, green beans, or Brussels sprouts, enhancing the meal’s nutrition and flavor. One tip I love is to make extra chicken for the next day — leftover chicken works wonderfully in quick meals like chicken fried rice or salads, reducing food waste and saving time. Overall, this one pan approach is perfect for busy weeknights when you want a comforting, home-cooked meal without a lot of hassle.
