matcha chiffon frog cake 💚🐸

can you believe that i’ve yet to try a matcha chiffon? this is my very first one and it turned out so good! strawberries complement the depth of the matcha with its sweet, slightly tart profile.

~ match chiffon cake ~ (recipe scaled to mini cake)

67 grams cake flour

1/2 tsp baking powder

1/8 tsp salt

1 tbsp matcha powder

1/4 cup &1/2 tbsp sugar

1/8 cup canola oil

1/2 tsp vanilla extract

2 egg yolks

2 egg whites

1/4 cup whole milk

1 tbsp sugar

1/8 tsp cream of tartar

Instructions

- preheat oven to 350 degrees f

- whisk flour, baking powder, salt, and matcha powder together

- beat oil and 1/4 $ 1/2 tbsp sugar with hand mixer, then add vanilla extract and 2 egg yolks for 2 mins (or until light yellow and creamy

- add in half the flour mixture. while mixing, stream half the milk.

- add in rest of the flour and milk

- in separate, clean and dry bowl, beat egg white and cream of tartar until soft peaks, then add 1 tbsp of sugar. continue beating until stiff peaks.

- carefully fold meringue mixture into batter.

- pour into sheet pan and bake at 350 for 9-10 minutes.

- allow cake to cool completely before decorating

- to make whipped cream frosting, use a hand mixture to beat 1/2 cup of heavy cream, 1/4 cup powdered sugar, optional 1/4 tsp vanilla extract.
