Weekend Bake!

This past weekend I was asked to make cookies for a surprise engagement party. I made chocolate chip and peanut butter blossom cookies since those are their favorites. 🍪

It was a challenge to get the cookies done but I managed 😆! We were in the middle of moving that same day but they turned out so good and everyone loved them!

Im so happy for my brother and his fiancé! Congratulations to you both!! ❤️ @Makayla Adkins

Here’s the chocolate chip recipe I followed!

Ingredients: 🍪

* 2 cup Cold Butter (cut into cubes, if you want a slightly thinner cookie, microwave for 7-8 seconds)

* 2 cup Brown Sugar

* 1.5 cup Sugar

* 4 large Eggs

* 4 teaspoons Vanilla

* 5.5 cups All Purpose Flour

* 2 teaspoon Cornstarch

* 1.5 teaspoon Baking Soda

* 1.5 teaspoon Salt

* 4 to 5 cups Chocolate Chips (semi-sweet or mix of milk chocolate and semi-sweet)

Instructions: 🍪

1. Preheat oven to 400 degrees (if not chilling the dough). Check your oven temperature using an oven thermometer since some ovens run hot. If you suspect your oven runs hot, preheat oven to 385 degrees. In a large mixing bowl, cream butter, brown sugar, and sugar for 4 minutes until light and fluffy.

2. Add eggs and vanilla. Mix for 1 minute longer.

3. Stir in flour, cornstarch, baking soda, and salt. Mix just until combined. Fold in chocolate chips.

4. If time permits, wrap the dough tightly in plastic wrap and chill for 24 hours. If not, scoop cookie dough onto baking sheets. I suggest using parchment paper or Silpat silicone baking sheets on light-colored baking sheets. If you using dark colored baking sheets, the bottoms of the cookies may brown quickly and can burn. I suggest using light-colored cookie sheets.

5. Bake for 8-11 minutes or until the edges just begin to turn a light golden color. Remove from oven and let set for 5 minutes before removing from the cookie sheet.

Chocolate chip cookies and peanut butter blossom cookies are crowd-pleasers due to their classic flavors and delightful textures. Chocolate chip cookies bring a perfect balance of sweetness and gooey chocolate, while peanut butter blossom cookies feature a soft peanut butter base crowned with a chocolate kiss, adding a charming touch. To make the baking process smoother, especially when time is tight—as in the case of moving or other busy days—preparing your ingredients in advance can help. Measuring out the flour, sugars, and peanut butter before starting can save precious minutes. Using room temperature butter and eggs ensures better mixing and consistent dough texture. When baking, rotating the cookie sheet halfway through helps achieve even baking and golden edges. Personal touches like adding a pinch of sea salt on top of chocolate chip cookies can enhance the flavors. For peanut butter blossom cookies, chilling the dough before baking helps maintain their shape and prevents excessive spreading. Sharing these homemade cookies at a family celebration not only adds sweetness to the event but also creates warm memories. Congratulations messages, such as for the newly engaged couple, add to the joyous atmosphere. Remember, no matter how busy you are, taking a moment to bake treats brings happiness and shows your love and support in a tangible way.
