Let’s Make Baby Elote

I am actually so proud of this! This is not an original recipe, as it is a popular Indian cuisine to cook with baby corn. It is also popular to make street corn/Elote. I took inspiration from recipes online, but made it my own!

WHAT YOU NEED:

Can of (or fresh) baby corn

Butter

Sour Cream

Paprika

Chili Powder

Oregano

Garlic salt

Onion Powder

Lemon Juice

WHAT I DID:

•🌟I started with a can of baby corn and boiled it. Technically, you don’t need to boil it if it’s canned, but I didn’t realize that until I read it on an article online. It’s ideal to boil it if fresh, so that it gets softer. Don’t worry, there will still be a “crunch” factor to it!

•🌟After this, I put the corn in a bowl with a paper towel in it so that it could dry. It’s important to dry it off!

•🌟I then put butter in a skillet and dropped in the baby corn to grill. Make sure to move them around during the cooking process to get all sides. I put paprika, chili powder, onion powder, and some lemon juice on it while it was grilling.

•🌟While cooking, I made the sauce. I ended up changing the first sauce I made because it was too much. I tried mayonnaise in it because that’s what they normally do with street corn, but ew I hated how it turned out. SO, instead, I did sour cream as the main sauce then added paprika, chili powder, oregano, lemon juice, onion powder, and just a little bit of garlic salt. It was really a season to taste experience. The oregano really made it awesome. I added feta cheese crumbles to the sauce.

•🌟When the corn was grilled completely, I put it in a bowl and added the sauce on top. I put some more feta on top and mixed it all together.

🤍🤍From the first taste, I was IN LOVEEEEE. I wish I had more corn and sour cream because I’d eat it everyday. I might go get some today….🤍🤍
