- 2 teaspoons salt

- 2 tablespoons of olive oil

- 1 cup all-purpose gluten-free flour

- 1/2 cup nutritional yeast

- 3-6 eggs, whisked

- 1 1/4 cup gluten-free breadcrumbs

- 1 cup parmesan cheese, freshly grated

- 3 tablespoons Italian seasoning

- 1 teaspoon red pepper flakes

Directions

1. Preheat the oven to 425 degrees Fahrenheit and line a large baking sheet with parchment paper

2. Cut the eggplants into fries, then spread them on the parchment paper and sprinkle salt over the eggplant. Allow to sit for 15 minutes, then dab gently with a paper towel to absorb excess moisture.

3. Add the eggplant slices to a large bowl and drizzle in the olive oil before tossing to incorporate.

4. Combine the flour and nutritional yeast in a shallow bowl. Then set to the side.

5. Whisk the eggs together in a bowl, then place set to the flour mixture.

6. Finally, combine the breadcrumbs, Parmesan cheese and Italian seasoning in a shallow bowl before setting next to the whisked eggs.

7. Dredge the eggplant slice in the flour mixture before transferring to the whisked eggs and covering to coat the whole slice.

8. Carefully place the slice in the shallow bowl and dredge in the breadcrumb mixture and place on the baking sheet

9. Repeat with the rest of the eggplant slices

10. Bake for 30 minutes, flipping halfway to ensure the fries cook evenly

11. Allow to cool for 10 minutes

... Read moreOkay, so you've just whipped up a batch of those amazing crunchy parmesan eggplant fries – seriously, how good are they?! They're fantastic on their own, but let's be real, what's a delicious fry without a killer dipping sauce? I've been experimenting, and let me tell you, the right sauce takes these crispy eggplant fries from delicious to absolutely divine! Dipping Sauces to Elevate Your Eggplant Fries! Creamy Garlic Aioli: This is my absolute go-to. It's super simple! Just mix about half a cup of good quality mayonnaise with 1-2 minced garlic cloves (or a teaspoon of garlic powder), a squeeze of fresh lemon juice, and a pinch of salt and pepper. The creamy, zesty garlic perfectly complements the savory parmesan eggplant fries. Spicy Sriracha Mayo: For those who like a little kick! Combine mayonnaise with sriracha sauce to your preferred spice level. A dash of lime juice can brighten it up even more. It's incredibly easy and adds a vibrant flavor. Classic Marinara: You can't go wrong with a warm marinara. While homemade is always best, a good quality store-bought marinara sauce, gently heated, works wonderfully. It brings a familiar Italian comfort food vibe to your gluten-free fried eggplant. Cool Ranch Dip: Think beyond chips! Whisk together sour cream or Greek yogurt with a packet of ranch seasoning mix. It's creamy, tangy, and surprisingly good with these crispy eggplant sticks. Sweet & Tangy Honey Mustard: Another quick mix! Combine Dijon mustard, honey, and a splash of apple cider vinegar. It's a fantastic balance of sweet and savory that works wonders with the savory parmesan eggplant fries. Fresh Yogurt-Dill Dip: For a lighter, healthier option, mix plain Greek yogurt with fresh chopped dill, a hint of garlic, lemon juice, salt, and pepper. It's refreshing and cuts through the richness of the fries beautifully. Tips for Even Crispier Eggplant Fries (or Eggplant Fingers!) You know how important that crunch is! Here are a few extra tips I’ve picked up to ensure your eggplant fries are always perfectly crispy: Don't Overcrowd the Pan: This is crucial! If you pile too many eggplant fingers onto one baking sheet, they’ll steam instead of crisp. Use two sheets if necessary, ensuring plenty of space between each fry for air circulation. Use a Rack: For maximum crispiness, try baking your eggplant fries on a wire rack placed over your parchment-lined baking sheet. This allows air to circulate all around them, preventing a soggy bottom. Pre-Drying is Key: The original recipe does a great job with salting and dabbing, but don't rush this step. Excess moisture is the enemy of crispiness! You want those eggplant fries as dry as possible before breading. A Light Oil Spray: Before baking, a quick, even spray of olive oil or avocado oil over the breaded eggplant can help achieve that golden, fried texture without actually deep-frying. These parmesan eggplant fries are already amazing, but with these dipping sauces and extra tips, you'll reach a whole new level of deliciousness. Whether you call them eggplant fries, eggplant fingers, or crispy eggplant sticks, they're a fantastic gluten-free fried eggplant alternative that's sure to impress!
