Mushroom and Leek Risotto w/ scallops and spinach
Husband and I enjoyed this delicious dinner tonight! One day I’ll have a nice set up and pretty dishes to take 📸 with, but for now it’s paper plates and a black background!
I am quite impressed with myself with this dinner! It was kind of relaxing to make, but I enjoy chopping and stirring.

The risotto was an adaptation of The Kitchn Mushroom and Leek Risotto. I used dried shiitakes I already had and baby Bella mushrooms and 3 medium leeks and no onion. I mixed in ~ half cup of freshly grated parm to the risotto at the very end. The scallops were just sautéed in butter until done, and same for the spinach.🧂 and pepper to taste.
