Peach Cobbler Cinnamon Roll Gooey Butter Cake

Peach Cobbler Cinnamon Roll Gooey Butter Cake with Creamy Vanilla Bean Frosting 🍑🍰🍂

Ingredients:

- For the cake base:

- 1 box yellow cake mix

- 1 large egg

- 1/2 cup unsalted butter, melted

- For the gooey filling:

- 8 oz cream cheese, softened

- 2 large eggs

- 1 tsp vanilla extract

- 4 cups powdered sugar

- 1/2 cup unsalted butter, melted

- 2 tsp ground cinnamon

- 1/4 tsp ground nutmeg

- 1 1/2 cups canned peaches, drained and diced

- For the creamy vanilla bean frosting:

- 1/2 cup unsalted butter, softened

- 4 oz cream cheese, softened

- 2 cups powdered sugar

- 1 tbsp heavy cream

- 1 tsp vanilla bean paste (or vanilla extract)

Directions:

1. Preheat Oven:

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan.

2. Prepare the Cake Base:

In a large bowl, combine the yellow cake mix, melted butter, and 1 egg. Mix until a soft dough forms. Press the dough evenly into the bottom of the prepared baking pan.

3. Make the Gooey Filling:

In another large bowl, beat the softened cream cheese until smooth. Add the eggs and vanilla extract, and beat until fully combined. Gradually mix in the powdered sugar, then stir in the melted butter, cinnamon, and nutmeg. Gently fold in the diced peaches.

4. Assemble the Cake:

Pour the gooey peach filling over the cake base, spreading it evenly with a spatula.

5. Bake the Cake:

Bake for 40-45 minutes, or until the edges are golden and set, but the center remains slightly gooey. Be careful not to overbake, as you want the center to stay soft and gooey.

6. Prepare the Creamy Vanilla Bean Frosting:

In a large bowl, beat the softened butter and cream cheese until smooth and creamy. Gradually add the powdered sugar and mix until combined. Stir in the vanilla bean paste (or vanilla extract) and heavy cream, beating until smooth and fluffy.

7. Cool and Frost:

Allow the cake to cool completely. Once cooled, spread the creamy vanilla bean frosting evenly over the top of the cake.

8. Serve:

Slice and enjoy the sweet combination of peach cobbler flavors, cinnamon roll goodness, and rich vanilla bean frosting.

Chef’s Tip: For an extra touch, sprinkle a little cinnamon sugar over the top before serving 🤌🏼
