I’m still greatly enjoying the variety and balance of foods I get to enjoy as inspired by the book. I was able to put this goddess lunch together in 4 minutes. 90 minute rice, cucumber, tomato, onion all in the veggie chopper. Squeeze some lemon juice on top and sprinkle on some greens goddess season from Trader Joe’s. Finally, I popped open a can of sardines for a complete protein and added a dollop of Greek yogurt tzatziki.
