Blueberry Mug Cake

Definitely planning a mug cake series next! This was amazing! It almost reminds me of the blueberry cobbler recipe!

Blueberry Dump Cake Recipe

2 tablespoons olive oil

1/2 teaspoon vanilla extract

1/2 teaspoon almond extract

3-4 tablespoons blueberry pie filling

*optional*

1 scoop Vanilla Ice Cream

Lemon zest

Mint

Didections:

Place flour, sugar, baking powder, milk, oil, vanilla and almond extract into a mug and stir together until thoroughly mixed.

Wipe excess batter from around the inside of glass and microwave for 90 seconds. Be careful not to burn your hands on the hot mug.

... Read moreHonestly, since I first discovered the magic of a blueberry mug cake, my dessert game has been forever changed! It’s truly amazing how you can whip up something so delicious in under two minutes. I've been experimenting with this recipe quite a bit, and I wanted to share some of my personal insights and tips to make your blueberry mug cake experience even better. First, let's talk about those essential ingredients. I've found that using coconut sugar gives it a lovely, subtle caramel-like sweetness without being overpowering. But if you don't have it, regular granulated sugar or even a natural sweetener like maple syrup (adjusting liquid slightly) can work in a pinch. For the milk, almond milk is fantastic, but I've also had success with oat milk or even regular dairy milk if that's what you have on hand. The olive oil adds moisture and richness, but melted butter or even a neutral oil like canola would be fine too. And those extracts – vanilla and almond – they truly elevate the flavor, making it taste like something from a fancy bakery, not a microwave! One thing I've learned about microwave mug cakes is that precision matters, but so does your microwave! Mine tends to cook quickly, so 90 seconds is usually perfect for a moist, fluffy cake without it getting rubbery. If your microwave is less powerful, you might need an extra 10-20 seconds. Keep an eye on it! It should look set but still slightly moist in the center. Overcooking is the number one enemy of a good mug cake, making it dry and dense. Now, for the star of the show: the blueberries! The recipe uses blueberry pie filling, which is super convenient and gives you those juicy bursts of flavor. But if you're looking for a fresher taste, you can definitely use fresh or frozen blueberries. If using frozen, I recommend tossing them in a tiny bit of flour first to prevent them from sinking to the bottom, and you might need an extra 15-30 seconds of microwave time. For a blueberry muffin mug cake vibe, you could even add a sprinkle of streusel topping before microwaving (oats, brown sugar, and butter crumbed together). Feeling adventurous? Here are a few variations I've tried. A pinch of cinnamon or nutmeg really complements the blueberry flavor, especially if you're going for that cobbler feel. Sometimes, I'll stir in a tablespoon of white chocolate chips for an extra layer of sweetness. You can also play around with garnishes – a dollop of whipped cream, a sprinkle of granola for crunch, or even a drizzle of lemon glaze (lemon juice mixed with powdered sugar) would be fantastic. The lemon zest mentioned in the original recipe is also a brilliant addition, brightening up the whole flavor profile. So, if you're ever craving a quick, comforting, and utterly delicious dessert, this blueberry mug cake recipe is your answer. It's become my ultimate secret weapon for satisfying those sweet tooth moments without a lot of fuss. Give it a try, and let me know your favorite way to enjoy it!
