Mexican Wedding Cookies, also known as Russian Tea Cakes or Snowball Cookies, are a beloved treat enjoyed during the holiday season and at celebratory events like weddings. Their signature powdery exterior and melt-in-your-mouth texture make them a crowd favorite. These cookies are traditionally made with a buttery dough combined with finely chopped nuts, typically pecans or walnuts, which add a satisfying crunch and rich flavor. The double coating of powdered sugar not only gives the cookies their characteristic 'snowy' appearance but also adds a subtle sweetness that balances the nutty flavor. When preparing these cookies, chilling the dough is a key step. It helps the dough firm up, making it easier to roll into perfect balls and prevents excessive spreading during baking. Baking at 350°F for 12 to 14 minutes allows the cookies to set without browning too much, preserving their delicate texture. For an even tastier experience, some variations include adding a touch of cinnamon or almond extract to the dough, complementing the vanilla and nuts beautifully. While the classic recipe calls for pecans, feel free to experiment with walnuts or macadamia nuts for a different taste profile. Mexican Wedding Cookies are versatile: they make excellent gifts, enhance holiday cookie trays, and are a sweet addition to weddings or any festive gathering. Because they keep well, these cookies can be baked in advance, making holiday preparation less stressful. To maintain their freshness, store the cookies in an airtight container for up to two weeks. You can also freeze them for longer storage, just be sure to add the powdered sugar coating after thawing to preserve their signature look and texture. This simple yet delightful recipe is perfect for bakers of all skill levels and uses common pantry staples. Whether you’re new to baking or an experienced home chef, these cookies are a charming way to celebrate the season and share sweetness with loved ones.
