After harvesting your garden beans, preserving them properly is essential to enjoy their freshness through the winter months. One of the best methods I've found is vacuum sealing using a FoodSaver device. It removes air that can cause freezer burn, extending the shelf life of your beans significantly. Before vacuum sealing, I always recommend blanching the beans. This involves briefly boiling them for 2-3 minutes and then immediately plunging them into ice water. This process helps lock in color, texture, and nutrients. After drying thoroughly, pack the beans into vacuum seal bags and seal tightly. The FoodSaver system allows for an airtight seal which helps retain freshness. Storing your sealed bags flat in the freezer not only saves space but also makes it easier to thaw only what you need. I've found this method keeps beans tasting fresh for up to a year. In addition to vacuum sealing, you might explore other preservation techniques like freezing without vacuum sealing or even pickling if you want a different flavor profile. However, vacuum sealing paired with blanching remains my favorite because of its simplicity and effectiveness.
