Seriously, if you're looking for something sweet that's also packed with protein and won't leave you feeling guilty, this is it. I mean, who knew cottage cheese could be this versatile? I often grab a tub of Great Value fat free cottage cheese or whatever Kroger low fat cottage cheese is on sale because they're perfect for keeping things light. The key is blending it super smooth so you get that perfect cookie dough texture – no one will ever guess it's cottage cheese! Here's how I whip up this magic: Ingredients: 1 cup (around 220g) fat-free or low-fat cottage cheese (your preferred brand works great!) 2-3 tablespoons maple syrup (adjust to your sweetness preference) 1 teaspoon vanilla extract (don't skip this for that classic cookie dough flavor!) 1/4 cup oat flour or almond flour (optional, for thicker dough) 1/4 cup chocolate chips (mini ones work best for even distribution!) Optional: A pinch of salt, a dash of almond extract, or a tablespoon of peanut butter for extra richness. For dipping: Melted chocolate (dark chocolate is my go-to!) and a teaspoon of coconut oil for smooth dipping. Instructions: In a food processor or high-speed blender, combine the cottage cheese, maple syrup, and vanilla extract. Blend until completely smooth and creamy.
