Simple Keto Dinner 🫶🥰
Yes, I am back on a modified low carb diet. Meaning I will have very low carbs on my rest days and moderate carbs on my lifting days. Sadly I can’t keep tracking calories, it is just not for me. Before getting pregnant I had lost 60 lbs in 7 months following a low carb high fat diet and reversed my pcos symptoms! I will be following this lifestyle until I reach my goal weight. Only tracking carbs and protein for now 💖🥰

Hey everyone! So glad you're here because I'm excited to share more about my absolute go-to keto dinner that’s been a game-changer for me: the delicious New York strip steak with a fresh avocado salad. As I mentioned, I’m back on my modified low-carb journey, focusing on meals that are not only satisfying but also super effective. This isn't just about cutting carbs; it's about feeling energized and achieving real health goals. Before getting pregnant, I successfully lost 60 pounds in just seven months by following a low-carb, high-fat diet, and incredibly, it even helped reverse my PCOS symptoms! Now, I’m applying a similar approach – very low carbs on rest days and moderate carbs on lifting days – because I know it works for my body. Tracking every single calorie isn't for me, but focusing on quality carbs and protein, like in this meal, makes it sustainable and enjoyable. So, why is this steak and avocado salad combination so perfect for a keto or low-carb lifestyle? It's simple: you're getting a powerhouse of healthy fats from the avocado and grass-fed butter, high-quality protein from the New York strip steak, and minimal carbs. This keeps you feeling full, helps stabilize blood sugar, and supports your body in burning fat for fuel. It truly makes sticking to your goals feel effortless. Making this dinner is incredibly easy. For the New York strip steak, I love to cook it in grass-fed butter in a hot pan. Just season your steak liberally with salt and pepper. Heat your pan (cast iron is amazing for this!) over medium-high heat, add a generous pat of grass-fed butter, and once melted and shimmering, sear your steak for about 3-4 minutes per side for a perfect medium-rare. Adjust cooking time for your desired doneness. The butter creates a beautiful crust and infuses the steak with incredible flavor. Next up, the avocado salad. This is where you can really make it your own! My version is simple: diced ripe avocados, perhaps some cherry tomatoes or thinly sliced red onion for that pop of color and flavor (just like those 'red pieces' I often add!). I usually toss it with a squeeze of fresh lime juice, a drizzle of olive oil, and a pinch of salt and pepper. Sometimes I add some fresh cilantro or a sprinkle of everything bagel seasoning for an extra kick. You can serve it on a bed of mixed greens or alongside the steak as a hearty side. The creamy avocado perfectly complements the rich, savory steak. What I love about this meal is its versatility. You can switch up your greens, try different keto-friendly dressings, or even experiment with other cuts of beef. The key is keeping it simple, delicious, and aligned with your low-carb macros. This dinner isn't just a meal; it's a testament to how satisfying and enjoyable a healthy eating plan can be. If you're looking for an effective and tasty way to boost your weight loss journey or manage conditions like PCOS, definitely give this keto steak and avocado plate a try. It’s become a cornerstone of my dinner rotation, and I think it will become yours too!
