Prosciutto-wrapped scallops are one of my favorite last-minute but elevated holiday apps. No hours in the kitchen, no grabbing extra ingredients you’ll never use again— just warm, savory, pop-in-your-mouth bites that disappear faaast.

Bonus: They’re also amazing tossed onto a simple salad if you want to bring something a little unexpected when you’re tasked with making the salad. (Warm scallops + spinach + balsamic)

What you need:

• Scallops (small ones), thawed or fresh

• Prosciutto, sliced thin

(Deli counter is your friend — I usually get 2 scallops per slice. Order extra… for quality control:)

How I do it:

1. Pat scallops very dry

2. Remove the side muscle if you remember (not mandatory)

3. Tear prosciutto in half, then fold again for a snug wrap

4. Season lightly w/ s&p

5. Sear in a hot skillet with a little oil or butter until golden. Approx 2-3 min per side depending on size
