Lentils are said to bring good luck and whether or not that’s true, they’re already one of my favorite ways to make meals feel filling, and budget-friendly. This salmon and lentils dish is cozy, flexible, and one of those dinners that somehow tastes even better the next day.

Salmon & Lentils (2–3 servings)
Ingredients:
• ¾ cup dry lentils
• 1 small leek or onion
• 1 carrot, finely chopped
• 1 celery stalk, finely chopped
• 2 garlic cloves
• 1 bay leaf (optional)
• ½ tsp thyme or 1 tsp fresh
• ½ tsp cumin
• 3/4-1 lb salmon - 3-4 oz per serving
• 1–2 tbsp olive oil or butter
• 1 lemon
• Optional: spinach, arugula, or kale
Dressing:
• 2 tbsp olive oil
• 1 tbsp red wine vinegar
• 2 tsp Dijon
• ½ shallot, minced (optional)
• 1 garlic clove, minced
• Salt + pepper
Quick How-To:
• Cook lentils (20–25 min)
• Sauté veggies + seasoning
• Toss lentils with veggies + dressing
• Cook salmon however you like
• Add greens at the end (optional)
