Strawberry Tarts 🌸
Tart crust:
•130 g butter, softened
•260 g flour
•90 g powdered sugar
•30 g almond flour
• 2 g salt
• 1 egg
Strawberry Confit:
•200 g strawberries
•30 g sugar
• 3 g pectin
Mascarpone Whipped Cream:
•250 g mascarpone (cold)
• 250 ml heavy cream (cold)
• 30-40 g powdered sugar
• 1 tsp vanilla extract (optional)
Tart crust:
1. Mix butter, flour, powdered sugar, almond flour, and salt in a mixer until crumbly.
2. Add egg and mix until dough forms a ball.
3. Roll out to 2 mm between parchment sheets and refrigerate overnight.
4.Next day, line tart ring, trim excess, and bake at
160°C (320°F) for 15 minutes on an air mat.
Strawberry Confit:
1. Cook strawberries gently until saucy.
2. Add sugar mixed with pectin and boil briefly.
3. Cool slightly, spread on tart shell. Chill to set.
Mascarpone Whipped Cream:
1. In a cold bowl, combine mascarpone, cream, sugan and vanilla.
2. Whip on medium until medium-stiff peaks form do not overwhip.
3. Use immediately or refrigerate. It will firm up slightly as it chills.
