Strawberry Matcha Cookies 🍵

Ingredients:

-125g salted butter (105g if not browning butter)

-120g caster sugar

-60g light brown sugar

-1x egg (room temperature)

-2 tsp vanilla extract

-200g plain flour

-2 tsp matcha

- 1 tsp baking soda

-50g freeze dried strawberries (crushed)

-white chocolate chips

Method:

-Add butter to a saucepan and melt over low/medium heat, stirring consistently. The butter will start to foam, keep stirring until the butter turns a golden brown/amber colour.

Once you achieve this colour, carefully transfer the butter into a heat safe dish and let cool for 10-15 minutes.

-In a bowl, whisk cooled brown butter, brown sugar and caster sugar until combined.

-Add egg and vanilla extract and whisk until combined.

-Sift in flour, matcha and baking soda. Fold until combined.

-Fold in white chocolate chips and freeze dried strawberries.

-Take 1-2 heaped tbsp of cookie dough (approx 50g-60g), roll into a ball and place on a lined baking tray. Add extra white chocolate chips on top.

-Chill cookie dough balls in the freezer for 1 hour.

-Bake at 160C for 12-17 minutes. Adjust the time to how fudgy/gooey you like your cookies.

-optional: as soon as your cookies come out of oven carefully top with additional freeze dried strawberries.
