Ingredients:

• 2 cups all-purpose flour

• 1 cup almond flour

•3/4 tsp fine sea salt

• 1 cup unsalted butter, room temperature

•2/3 cup sugar

• 1 tsp vanilla extract

• 1 egg

•zest of 1 lemon

• Powdered sugar, for dusting

• Any flavor of jam, for filling

Method:

1. Mix all-purpose flour, almond flour and salt.

2. Beat butter and sugar until fluffy. Add vanilla, extract, egg, and zest, then mix.

3. Combine wet and dry mixtures.

4. Shape dough into a disk, wrap, and chill for 30-60 minutes.

5. Preheat oven to 350°F and line a baking sheet.

6. Roll dough to 1/4-inch thick. Use a heart-shaped cookie cutter to cut out shapes, then cut each shape in half. For the eyes, use the small end of a piping tip to create two small holes. For the mouth, use the larger opening. Gently tilt and press the cookie slightly to give it a ghost-like appearance.

7. Bake for 11-13 minutes until golden.

8. Cool on a wire rack.

9. Dust cookies with powdered sugar, spread jam, and sandwich together.
