For the tart:

•11/4 cups all-purpose flour

• 1/4 cup powdered sugar

• 1/2 cup cold unsalted butter, cubed

• 1 egg yolk

• 1 tbsp cold water

For the pastry cream:

• 4 egg yolks

• ¾ cup granulated sugar

•¼ cup cornstarch

•2 cups whole milk

• 2 tbsps unsalted butter

•¼ tsp salt

• 2 tsp vanilla extract

Method:

For the tart

1. Preheat oven to 175°C. In a food processor, pulse flour, sugar, and butter until crumbly. Add egg yolk and water, pulse until dough forms. 2.Wrap and chill 30 min.

3. Roll out dough, cut flower shapes using a flower shape cookie cutter, and place over a muffin pan. Press the center to form a base. Freeze 1 hour.

4. Prick the base and bake 20 min. Cool completely.

For the pastry cream

1. Whisk the egg yolks, cornstarch, and sugar until smooth. Add the milk, whisking until fully combined.

2. Cook over medium heat, stirring constantly, until thickened.

Remove from heat and stir in the butter, salt, and vanilla.

3. Transfer to a bowl, cover the surface directly, let cool, then refrigerate.

To assemble:

Fill the tart shells with jam of your choice, add the pastry cream, and top with fresh strawberries.
