• 1 large egg
• 2½ cups all-purpose flour
• ½ cup cornstarch

• ½ tsp onion powder
• 5 tsp kosher salt (divided)
• Freshly ground black pepper
• Neutral oil (vegetable/canola/peanut) for frying (~4-6 cups)

For the sauce:
• ¾ cup mayonnaise
• 3 Tbsp ketchup
• 1 Tbsp Worcestershire sauce
• 1 tsp garlic powder
• ¾ tsp black pepper
• ½ tsp onion powder
• ½ tsp kosher salt

Instructions:
1. Whisk egg + buttermilk + 2 tsp salt + a few grinds of pepper. Add chicken strips, coat, refrigerate at least 2 h or overnight. 
2. In a shallow bowl, combine flour + cornstarch + paprika + garlic powder + onion powder + remaining 3 tsp salt + pepper. 
3. Heat oil in a heavy pot to 350 °F. Remove chicken from marinade, let excess drip off, coat in flour mix, dip again briefly in marinade, coat again. 
4. Fry in batches (don’t overcrowd) until golden and internal temp reaches 165 °F (~3-4 min). Drain on wire rack. 
5. For the sauce: mix all sauce ingredients, chill until ready to serve. 
6. Serve chicken hot with sauce, crinkle fries, and Texas toast if you like.
