Low Carb Tex Mex Pizza
Living the low-carb lifestyle has been a wonderful journey for me. Not only do I still get to eat some wonderful food, but trying new recipes is so much fun!
And here is one recipe that is just so yummy you won’t believe it! Mr. G even said this is one of them best low-carb recipes I have ever made. Folks, that was a huge compliment for my cooking skills that day.
It’s easy. It’s spicy. And could be changed up to suit your tastes.
Here’s how to make it:
- 2 low carb tortillas
- 1 pound of cooked ground beef
- Shredded Jalapeno Monterey Jack Cheese
- Shredded Cheddar Cheese
- Taco Seasoning (I make my own)
- Can of Rotel Tomatoes
- Chopped green peppers and onion
- Chopped black olives
Using a 10” skillet, lay your ingredients in this order:
Tortilla
Ground beef
Jalapeno Monterey Jack Cheese
Taco Seasoning
Tortilla
Drained Rotel tomatoes
Cheddar Cheese
Green Peppers
Onions
Olives
Bake at 400 degrees for 30 minutes. Serve with sour cream.
You can also add a bit of queso sauce over the ground beef for a little more flavor.

Living a low-carb lifestyle often means getting creative in the kitchen, and let me tell you, finding recipes that are both satisfying and easy is a huge win! That's why I absolutely adore this Tex Mex skillet pizza. It's become a staple in my dinner rotation, especially on those busy weeknights when I crave something hearty but don't want to spend hours cooking. One of the biggest reasons I love making pizza in a skillet is how incredibly quick and simple it is. Forget messing with messy dough or waiting for a traditional pizza crust to bake. Using low-carb tortillas as a base in a good, sturdy skillet – like my trusty Lodge cast iron – creates this amazing, slightly crispy crust that holds up perfectly under all those delicious toppings. The skillet heats evenly, ensuring everything cooks through beautifully, and you get that wonderful melty cheese action without any fuss. Plus, cleanup is a breeze! Now, let's talk about those Tex Mex flavors. The original recipe is fantastic, but I've found a few little tricks to really make it pop. If you're using store-bought taco seasoning, always check the ingredients for added sugars or starches, as they can sneak in extra carbs. Making your own blend of chili powder, cumin, paprika, garlic powder, onion powder, and a pinch of cayenne gives you full control and a fresher taste. Beyond the ground beef, sometimes I'll swap in shredded chicken for a lighter option, or even ground turkey. Don't be shy with the toppings either! A dollop of fresh guacamole or sliced avocado on top after baking adds a creamy richness that’s just irresistible. A sprinkle of fresh cilantro and a dash of your favorite low-carb hot sauce can elevate it even further. Choosing the right low-carb tortilla is key. There are many brands out there now, so experiment to find one you love that has a good texture and low net carbs. If you're looking to go even lower carb or just want a different kind of base, you could try using a 'fathead' mozzarella dough recipe as a crust, or even build it directly on a large browned ground beef patty for a truly crustless pizza experience. The beauty of this recipe is its flexibility – it truly adapts to your needs and what you have on hand. I've also played around with different cheese combinations. While Monterey Jack and cheddar are classics, adding a little pepper jack for an extra kick or some crumbled cotija cheese for an authentic Tex Mex saltiness can be amazing. For veggies, besides the peppers, onions, and olives, I sometimes throw in a few thinly sliced mushrooms or some diced zucchini. And if you're feeling adventurous, a drizzle of low-carb queso or a sugar-free ranch dressing after it comes out of the oven takes it to another level. This skillet pizza is fantastic for a single serving, but it's also easy to scale up for family dinner. I often make two at once if I'm feeding a crowd. It reheats pretty well too, making it a great option for lunch the next day – just pop it back in the skillet on low heat or in the air fryer until warmed through and crispy again. It’s truly a satisfying meal that proves low-carb eating can be incredibly flavorful and fun. Give it a try, I bet you'll love it as much as I do!
