Chicken and Rice Soup for Fall! 🍂🍲🥖

In Maine today it dropped just below 70° so that called for my homemade chicken soup and a homemade loaf of bread! Fall is my favorite and I’m so ready for it.

Here’s my easy chicken and rice soup recipe:

🥕Ingredients:

1 medium yellow onion, chopped

2-3 cloves of garlic, minced

2-3 carrots, chopped

3-4 ribs of celery, chopped

1 rotisserie chicken, shredded (you can also cook up your own chicken breast and shred it as well)

1 cup of white rice or jasmine rice

6-8 cups of chicken broth (I like to replace 2-3 of these cups with chicken bone broth to add more flavor and more protein but this is optional)

Seasonings: (measure with your heart and taste for the following) garlic powder, onion powder, Italian seasoning, parsley flakes, salt, pepper

🐔Directions:

1. Chop all of the veggies and shred the chicken and set aside

2. Heat a pan with olive oil and then add your onion, carrots, and celery and cook down for about 3 mins then add in the garlic and all seasonings and cook down for another 2 mins.

3. Add the chicken broth and bring to a low boil

4. Add in the rice and cook according to the package you got, usually about 20 mins until it’s cooked

5. Add in the chicken and let simmer for another 5 mins while stirring occasionally, then serve!
