Carne con chile y papa

1. Deseed the gualijo Chiles & boil them with the chile de árbol

2. Put your meat to cook & season it with all the seasonings MINUS the chicken bouillon

3. Once your Chiles are soft, put them in a blender with a tablespoon or so of chicken bouillon

4. Strain the sauce onto your meat once it’s browned

(I put about 2-3 cups of water in the blender to get the remaining sauce to strain)

5. Add in your potatoes

6. This is when you’ll taste to see if it needs salt, put it to simmer until your potatoes are soft.

7. Around 20 mins or so of simmering, you can check again if it needs more salt since the potatoes will soak a lot of it up.

... Read moreCarne con chile y papa is a traditional Mexican dish featuring tender meat simmered with flavorful chiles and potatoes. To enhance the richness of this dish, using authentic ingredients is key. Start with 10-12 gualijo chiles and 2-5 chile de árbol, which impart a distinct flavor. Choose beef cuts that are suitable for stewing, like chuck or brisket, to ensure melt-in-your-mouth tenderness. When preparing the sauce, blend the softened chiles with seasonings, as their heat can vary, ensuring a balanced flavor profile. Make sure to taste as you go, only adding the chicken bouillon and salt according to your preference. The addition of potatoes not only complements the meat but also absorbs the savory flavors of the sauce, making every bite satisfying. After simmering for about 20 minutes, serve your Carne con chile y papa with warm tortillas or over rice for a complete meal, adding a touch of fresh cilantro for garnish. Enjoy this hearty dish that reflects the warmth and richness of Mexican cuisine.
