Pear Thyme Chamomile Nectar for Mother’s Day
I was trying to make pear thyme chamomile jam on the eve of the eve of Mother’s Day.
Soft pears.
Fresh thyme.
Chamomile tea steeped into bubbling sugar.
The kitchen smelled like a rainy afternoon.
I filmed the pears boiling down slowly, checked the temperature, poured in the tea, stirred everything together while the syrup turned golden around the fruit…
And this morning?
It never fully set.
Not quite jam.
Not quite syrup.
Something in between.
For a second, I thought about trying to fix it. Boil it longer. Add more lemon. Force it into becoming what I originally planned.
But the more I looked at it, the more I realized it was already beautiful.
Loose enough for cocktails.
Perfect over ice cream.
Something you could spoon over toast, yogurt, cake, pancakes, or fresh fruit.
A nectar. 🍐
And honestly, it made me think about mothers.
About how so many women spend their lives adapting and transforming things that weren’t supposed to work into something comforting, warm, and beautiful anyway.
My mother is one of those women.
She is the reason my creativity expands to the size of the universe and beyond. Growing up, she encouraged every school project, every cooking experiment, every strange idea, every endless conversation.
Without that kind of love and encouragement, I would not be writing here today.
So this one is for my mum 🤍
The first person to read everything I write.
The first person to hear my ideas.
The first person I pull inspiration from every single day.
And maybe this nectar becoming something softer than I expected feels fitting somehow.
Happy Mother’s Day.

Somewhere between a jam and a syrup… and honestly, I think I like it better this way.
Creating this pear thyme chamomile nectar was truly a delightful experiment in my kitchen. Unlike traditional jam, this recipe yields a soft, spoonable nectar that holds its own unique charm. The gentle simmering of soft pears combined with the aromatic freshness of thyme and the soothing notes of chamomile tea creates a complexity that's both comforting and refreshing. One of the things I loved most about this nectar is its versatility. It doesn't just sit well on toast like regular jam; it also makes for an excellent cocktail mixer, adding a fruity and herbal depth to drinks. I also enjoyed spooning it over creamy vanilla ice cream and pancakes — the nectar’s loose texture allows it to coat instead of overwhelm, letting each bite feel light yet flavorful. The process itself was calming, much like a rainy afternoon as the kitchen filled with warm, golden syrup aromas. Using a digital thermometer helped me monitor the temperature carefully to achieve the right consistency—a reminder that patience and attention to detail can make all the difference in homemade preserves. It was interesting how the nectar didn’t fully set like jam, prompting me to embrace this unexpected texture. This softer set reminded me of how adapting and accepting imperfections can lead to new, beautiful outcomes — much like motherhood itself. The soothing chamomile and earthy thyme also add a relaxing element, perfect for celebrating moms who deserve comfort and calm. If you want to try this at home, I recommend sourcing ripe pears for sweetness and fresh thyme for a vibrant herbal note. Chamomile tea can be brewed strongly to impart that gentle floral quality without overpowering. Remember to cool the nectar completely before storing it in the fridge; it keeps well and maintains that lovely, glossy finish. Overall, this nectar was a heartwarming way to celebrate Mother's Day—a little different, a bit unexpected, and wholly delightful.
