If you're looking to boost your meal prep with a wholesome yet quick-to-make dish, this fresh shrimp salad cooked in the airfryer ticks all the right boxes. Using the airfryer to cook the shrimp not only enhances their natural flavors with paprika, garlic, and onion powders but also ensures a crispy texture without excess oil, making it a heart-healthy choice. I've found that marinating the shrimp with a touch of chili powder adds a pleasant subtle heat and deepens the flavor profile. The combination of crunchy romaine lettuce, fresh tomato, cucumber, and shredded carrot provides a refreshing contrast to the warm, seasoned shrimp. Incorporating cooked white rice and sweet corn adds satisfying carbohydrates and natural sweetness, turning this salad into a balanced meal. From personal experience, using cooled rice helps keep the salad fresh and prevents sogginess. For the dressing, a simple mix of freshly squeezed lemon juice and olive oil with salt and pepper works wonders to brighten the dish and tie the flavors together without overpowering the ingredients. You can easily customize the dressing by adding a teaspoon of honey or Dijon mustard for added complexity. This salad is not only filling and energizing but also packed with nutrients that support digestive health thanks to the fiber from vegetables and complex carbohydrates from rice and corn. It's ideal for anyone aiming to maintain a nutritious diet, especially if you're looking for a delicious way to include more protein and vitamins daily without spending too much time in the kitchen. In my experience, preparing all the veggies in advance and storing the dressing separately makes assembling the salad even faster—perfect for busy weekdays. Plus, leftovers keep well in the fridge and can be enjoyed cold or at room temperature, making it a great option for meal prep or packed lunches.
