Ingredients:

• 2 chicken breasts, cut into cubes

• 1 tbsp olive oil or avocado oil

• Broccoli florets

• Mini corn

• 1 onion, sliced

• Water chestnuts

• Carrot sticks

• Snap peas

For the sauce:

• ¼ cup low-sodium soy sauce

• 1 tbsp honey

• 1 tbsp rice vinegar

• 1 tsp sesame oil

• 2 cloves garlic, minced

• 1 tsp grated ginger (optional)

• 1 tsp cornstarch + 1 tbsp water

Directions:

1. Season the cubed chicken with salt, pepper, garlic powder, onion powder, and paprika.

2. Heat the oil in a large skillet or wok over medium-high heat. Cook the chicken for 6–8 minutes, until golden and cooked through. Remove from the pan.

3. Add the onion, broccoli, carrots, and mini corn to the pan and cook for about 4 minutes.

4. Stir in the snap peas and water chestnuts, cooking for another 2–3 minutes so the vegetables stay crisp.

5. Whisk together the soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, and cornstarch mixture. Pour the sauce over the vegetables and let it simmer for 1–2 minutes until slightly thickened.
