... Read moreDorito casserole is one of those comforting, easy-to-make dishes that combines the bold flavor of Doritos with classic casserole ingredients for a hearty meal. When I first made this recipe, I loved how the crushed Doritos create a crunchy base and topping that contrasts perfectly with the creamy, cheesy filling. Using a party size bag of Doritos is essential because you want enough chips to both layer the bottom of your pan and sprinkle on top after baking. A tip for extra flavor is to use a taco seasoning blend that fits your taste preference—it can be mild, medium, or spicy. This seasoning combined with cooked ground beef brings a Tex-Mex twist that works wonderfully with the Rotel, which adds a nice hint of diced tomatoes and green chilies. Mixing the cooked and drained ground beef with cream of chicken soup helps bind the filling and keep it moist. When layering, be sure to crush your Doritos moderately—not too finely, so they still provide texture. After adding the meat mixture to the pan, top it generously with your favorite shredded cheese; a fiesta blend works great because it combines cheddar, Monterey Jack, and other cheeses for melty richness. Baking at 400 degrees until the cheese melts thoroughly usually takes about 15-20 minutes. Once out of the oven, adding the remaining crushed Doritos on top adds an extra layer of crunch that elevates the dish. This casserole is perfect for potlucks, family dinners, or even a quick weeknight meal when you want something flavorful and filling without a lot of fuss. For customization, you can add other ingredients like black beans or corn to the mixture for more texture and nutrition. Leftovers reheat well and maintain their delicious flavors. I highly recommend trying this Dorito casserole when you want a crowd-pleaser that’s easy to prepare and full of bold Mexican-inspired flavors.
