Ingredients 🛒

• Leftover cooked chicken tikka masala

• Leftover cooked rice

• 1 can (13.5 oz) coconut milk

• 1 onion, finely chopped

• 2 cloves garlic, minced

• 1 tbsp fresh ginger, grated

• 1 tsp cumin powder

• 1 tsp coriander powder

• 1/2 tsp turmeric

• 1/2 tsp chili powder

• Salt, to taste

• Fresh cilantro, chopped

• 2 tbsp canola oil

Instructions ✍️

• In a large pan, heat the oil over medium heat.

• Add the onion and cook for 5 minutes.

• Add the garlic and ginger. Sauté for 1-2 minutes.

• Add the leftover chicken tikka masala to the pan. Stir and mix well with the onions and spices.

• Pour in the coconut milk and stir to combine. Let the mixture simmer for 5-7 minutes.

• Add the cumin, coriander, turmeric, and chili powder.

• Once the curry starts to simmer, add the leftover cooked rice to the pan. Stir to combine the rice with the curry.

• Let the curry and rice mixture simmer for an additional 5-10 minutes.

• Once the curry has thickened slightly and the rice is heated through, remove the pan from heat.

• Serve with chopped cilantro and enjoy!
