we got sweetgreen at home! 🥗
okay but this sweetgreen harvest bowl dupe??? she’s doing everything she needs to do 😌 there's a lot of prep work but i promise it's worth it!
you’ve got the kale base, the sweet + savory vibes, cranberries, roasted veggies, and a tangy dressing, but i tweaked it to be a little lighter by skipping the grains. AND the miso maple dressing adds way more depth (trust me, it’s the star).
✨ quick tip: make the sauce first because it doubles as your marinade. coat your protein and let it hang in the fridge while you chop veggies + preheat the oven. multitasking means less waiting around. not to mention, the cost per bowl at home is practically half of what it is at sweetgreen so... a win is a win!

Okay, so you're diving into the world of making your own Sweetgreen-inspired Harvest Bowl, and maybe you're like me, always looking for delicious plant-based options! While the original recipe offers chicken, I've found that embracing the vegetarian route not only makes this bowl incredibly satisfying but also super versatile. When I first started making my own healthier meals at home, I often struggled to make vegetarian dishes feel as 'complete' as their meat counterparts. But let me tell you, this Harvest Bowl dupe totally nails it, especially if you focus on your protein and healthy fats. My go-to vegetarian proteins for this bowl are definitely the firm tofu, pressed and cubed, or tempeh. For tofu, pressing it is a game-changer – it gets rid of excess water, allowing it to soak up all that incredible maple miso dressing flavor we talked about. I usually press mine for at least 30 minutes, then cube it and toss it with half the dressing before baking or air frying until crispy. The texture becomes so much more appealing! Tempeh is another fantastic choice; it has a firmer, nuttier bite. I love crumbling it or cubing it and giving it the same marinade treatment. Both options absorb the dressing beautifully and provide a solid fiber and protein punch, keeping me full for hours. Beyond tofu and tempeh, don't be afraid to get creative. Sometimes I’ll add a can of drained and roasted chickpeas for extra crunch and protein. Or, if I want to boost the healthy fats even more, a sprinkle of toasted pumpkin seeds alongside the walnuts can be amazing. The key is ensuring a good balance of textures and nutrients. The combination of the sweet potatoes, carrots, and red onion, roasted to perfection, already brings so much heartiness. Coupled with the crisp Gala apples, chewy dried cranberries, and crunchy walnuts, you've got a symphony of textures in every bite. This ensures that even without meat, your Sweetgreen-inspired Harvest Bowl feels incredibly substantial and satisfying. Remember, the goal is a bowl that’s full of fiber, protein, and healthy fats, no matter your protein choice! Now, let's talk about that legendary maple miso dressing. It’s truly the heart of this Sweetgreen Harvest Bowl dupe, and honestly, I make extra just to have on hand! One thing I learned early on is that the quality of your miso paste can really elevate this dressing. A good quality, lighter miso will give you that perfect balance of umami without being too overpowering. If you find your dressing is a bit too thick after whisking, don't hesitate to add water literally a teaspoon at a time until you reach your desired consistency. It should be pourable but still cling to your kale and veggies. I love experimenting with this dressing. Sometimes, I’ll add a tiny pinch of cayenne pepper for a subtle kick, or a teaspoon of ginger paste for an extra layer of warmth. It's not just for salads, either! This maple miso dressing makes an incredible marinade for roasted vegetables beyond just sweet potatoes and carrots – think broccoli, Brussels sprouts, or even mushrooms. I've also used it as a dipping sauce for spring rolls or even drizzled over grilled corn. It really transforms any simple dish into something special. Making a batch ahead of time on a Sunday means I have delicious, flavor-packed meals ready to go for busy weeknights, and it definitely helps with meal prepping these amazing Sweetgreen Harvest Bowls!
