... Read moreYou know those days when you crave something delicious but also want to stick to your healthy goals? That's exactly how I felt when I whipped up these amazing Healthy Southwest Egg Rolls! They've quickly become a family favorite, especially for my dad – he asks for them all the time. It’s such an easy recipe, and perfect for a quick weeknight dinner or even a fun appetizer. Here’s how I bring these flavorful egg rolls to life: What you'll need (besides the ingredients listed): A large skillet A baking sheet or air fryer A small bowl for mixing Frying pan or air fryer Let's Get Cooking! My Step-by-Step Guide: Prepare Your Chicken: Start by cooking your chicken. I usually chop it into small, bite-sized pieces. Sauté it in a skillet until it's fully cooked through. This is where the magic of seasoning comes in! I generously sprinkle taco seasoning and a pinch of red pepper flakes over the chicken as it cooks. It gives it that authentic Southwest kick! Once cooked, set aside. Combine the Filling: In a large bowl, combine your cooked, seasoned chicken with the black beans (drained and rinsed), corn, and fresh spinach. Give it a good mix. Cheesy Goodness: Now for the cheese! I add both shredded Mexican cheese and mozzarella shredded cheese to the mixture. If you have some queso blanco (like Velveeta), a little bit really makes it creamy and delicious. Mix everything until well combined. The warmth from the chicken will help the cheese start to melt slightly, making it easier to work with. Assemble Your Egg Rolls: This is the fun part! I use carb balance tortillas instead of traditional egg roll wrappers to keep it healthy and lower in carbs. Lay a tortilla flat. Spoon a generous amount of your Southwest filling onto one side, leaving space around the edges. Roll 'em Up: Fold one side of the tortilla over the filling, then fold in the two short sides, and finally, roll it up tightly from the bottom. If you prefer a crispier texture, you can lightly brush the edges with a little water to help seal them. Cook to Perfection: You have a few options here: Baking: Place your rolled egg rolls on a baking sheet. Bake at 375°F (190°C) for about 15-20 minutes, or until golden brown and crispy. Flip halfway through. Air Frying: This is my favorite method for ultimate crispiness without excess oil! Preheat your air fryer to 375°F (190°C). Spray the egg rolls lightly with cooking spray and air fry for 8-12 minutes, flipping halfway, until golden and crispy. Pan Frying: You can also lightly pan-fry them in a little oil until golden on all sides. Why I Love This Healthy Spin: Using carb balance tortillas significantly cuts down on carbs compared to traditional wrappers, making this a much lighter option. The black beans, corn, and spinach add a fantastic boost of fiber and vitamins, turning these into a truly wholesome meal. The lean chicken provides protein, keeping you full and satisfied without feeling heavy. It's a fantastic way to enjoy your favorite flavors guilt-free! Tips for Customization & Serving: Veggies: Feel free to add diced bell peppers, onions, or even some jalapeños for extra heat. Protein: Ground turkey or even plant-based crumble works wonderfully if you want to switch it up or go vegetarian. Dips: These are amazing on their own, but I sometimes serve them with a side of light ranch dressing, salsa, or a homemade avocado-lime crema. Meal Prep: You can assemble these ahead of time and store them in the fridge for a day or two before cooking. They also freeze well uncooked – just thaw slightly before baking or air frying. These Southwest Egg Rolls are truly a testament to how healthy eating can be incredibly delicious and easy. Give them a try – I promise they'll be a hit in your home too!
