Perfect Veggie-Packed Fall Soup

If you like Olive Garden soups, you know about chicken gnocchi soup! It's my favorite fall soup that you can load with veggies and always tastes amazing!

Ingredients

â–¢ 2 tablespoons extra virgin olive oil

â–¢ 1 yellow onion, chopped

â–¢ 6 carrots, chopped

â–¢ 4 celery stalks, chopped

â–¢ 2 tablespoons salted butter

â–¢ 2 tablespoons flour

â–¢ 1lb chicken - I used drumsticks

â–¢ 2-4 cloves garlic, chopped

â–¢ 1 teaspoon paprika or smoked paprika

â–¢ 2 tablespoons fresh thyme leaves

â–¢ 1 pinch each kosher salt and black pepper

â–¢ 4-6 cups chicken broth

â–¢ 1 bag frozen spinach

â–¢ 1 cup half and half

â–¢ 1/2 cup grated parmesan

â–¢ 1 pound fresh potato gnocchi - if you want a recipe comment below!

Instant pot instructions

1. Salt and pepper then brown chicken, set aside.

2. Sauté onion, garlic and veggies (carrots and celery)

3. Add flour

4. Deglaze with chicken broth

5. Add chicken back to pot and add in spices

6. Manually pressure cook on high for 30 min.

7. Release and add half and half, spinach and Parmesan.
