It usually has a protein content around 10-12%, striking a balance that works well for cookies, muffins, and quick breads. I often use all-purpose flour when I want a good crumb without the chewiness of bread flour. Cake flour, with its low protein (6-8%), is my go-to when I want soft, tender cakes with a delicate crumb. It’s especially great for layered cakes and cupcakes where a light texture is key. Pastry flour sits somewhere between all-purpose and cake flour at 8-9% protein, providing just enough structure for flaky pastries like pie crusts and biscuits without sacrificing tenderness. An important note is the effect of whole wheat and rye flours, which have higher absorption rates and can add dense textures and nutty flavors.
