Once I realized how beginner friendly it was to grow green onions I wanted to stop buying them from the store. All you have to do is buy a pack of green onions, cut about 2-5 inches from the root and place the root in some water. It's true, once you start regrowing green onions, you'll wonder why you ever bought them! My journey began with just a few green onion roots in a simple jar of water on my windowsill, and the results were amazing. I've learned a few tricks along the way to keep them thriving and even tried regrowing them in soil, which is another fantastic option. Keeping Your Water-Grown Green Onions Happy: For those beautiful green onion roots in water, consistency is key! I found that changing the water every day or two prevents it from getting cloudy and keeps the roots healthy. Filtered water seems to work best for me, but tap water is usually fine too. Make sure your jar is placed in a spot with plenty of indirect sunlight, like a bright windowsill – direct sun can sometimes be too intense. You'll see those fresh green shoots emerging from the roots surprisingly fast, often within a few days, just like the incredible growth we saw from Day 1 to Day 14 in my photo series! If you notice any slimy residue, it's a sign to change the water immediately and maybe even give the roots a gentle rinse. Ready to Try Growing in Soil? While the water method is super easy, growing green onions in soil can give you even more robust plants and longer-lasting harvests, especially if you have a pot on a balcony or patio. After your green onion roots have established themselves in water for about a week and started growing new shoots, they're perfect for transplanting. Choose a Container: Any small pot (about 4-6 inches deep) with drainage holes works well. You can even use repurposed containers! Add Soil: Fill your container with a good quality potting mix. Plant the Roots: Gently nestle the green onion roots into the soil, burying the white part and leaving the green shoots exposed. You can plant several roots in one pot, giving them about an inch of space. Water & Sunlight: Water thoroughly after planting. Keep the soil consistently moist but not waterlogged. Place your pot on a sunny windowsill or a bright spot on your balcony where it can get at least 4-6 hours of sunlight daily. Harvesting for Endless Green Onions: Whether in water or soil, the harvesting method is similar. Once your green onions are about 6-8 inches tall, simply snip off what you need from the top with scissors, leaving about 1-2 inches of the white base and roots intact. They will regrow, ready for another harvest! I've had some plants give me multiple harvests, making them a true kitchen staple. It’s so satisfying to just walk over and snip fresh green onions for dinner! This simple act of growing my own food has added so much freshness to my meals and a little bit of green joy to my home each day.
